(09-15) 04:00 PDT AMATITAN, Mexico -- Drive 30 minutes northwest of Guadalajara, Mexico's second largest city, and a periwinkle carpet of blue agave plants begins to unfold, at first in patches, then eventually covering entire hillsides of red soils deposited 200,000 years ago by the eruption of Tequila Volcano.

Look closer and the lavender-blue plush shag becomes jagged and severe. The blue agave's razor-sharp, barbed, 6-foot-long leaves pierce the sky -- and any gringa foolish enough to get too close.

Blue agave occasionally draws blood from the jimadores who harvest it, but it also attracts an increasing number of spirits producers who use the sap from the succulent plant to make Tequila, Mexico's national spirit, its most important export, and the fire that fuels many a margarita in the United States.

Tequila has been produced in Mexico since the early 1500s, when Spanish conquistadores took the Aztecs' fermented agave juice, called pulque, and distilled it. Yet seemingly overnight, super- and ultra-premium Tequilas made from 100 percent blue agave and costing $40 and up have exploded onto the U.S. market.

These are smooth, complex spirits: peppery, honeyed and slightly herbal in taste, and uncluttered by ingredients other than pure blue agave. They're for sipping, not shooting ... and a wealthy San Francisco private equity investor and a Newport Beach mother of two decided there is room for one more high-end Tequila brand on the shelf.
